I think it’s time to introduce everyone to the chocolate lab that’s making her way around the property.  Sayde comes from a golden retriever father and black lab mother.   She is one of three in the litter and will be seven in November.  I picked her up from a rancher in Rosebud, Texas, who only wanted the male of the litter for a hunting dog (and only a bag of dog food in exchange for her).  I crawled under his pier-and-beam ranch house and found Sayde napping under the front staircase with her brother.  She has grown with me ever since from Texas all the way to Florida.  

Sayde has been fortunate enough to come with me to work here at Cypress and my former club.  So, she has become accustom to the golf course lifestyle, roaming the maintenance shop, riding along through the course, and of course counting squirrels.   She is very social and seems to have made many friends during her ride-arounds.  I hope everyone has had a chance to meet her and I’m sure she is looking forward to meeting all of you!

A tip for everyone:  Mid September to early October are generally the months where weed pre-emergents should be applied.  It is all timing based and it is always better to be early than late.  Another application can be done in three months for more control for the whole cool season if needed.  If the product is late applied, it will have no effect on weeds that have already germinated.  Winter annuals tend to begin germination when we see a drop in the nighttime temperatures (below 70 degrees F) for three consecutive days.  This week marks the Fall Equinox and typically the first changing in temperatures (which we had a near taste of last week).  Most products have 3 months control and home improvement stores generally carry them for St. Augustine and Bermuda grass lawns.

As you know by now our restaurant is open and we are putting some great tasting food out.

Although there are so many amazing dishes to choose from I am consistently getting the same question - what should I order?  I am going to let you in on my absolute number one favorite dish and how it’s made.

On our menu, under seafood you will see a dish called Roasted Wild Escolar, this is the dish that will have your mouth watering. Escolar is a deep water fish that looks very similar to mackerel. Step by step this is how we prepare it:

·         Take a 6oz filet of escolar and pan sear it in olive oil and butter allowing each side to get a nice brown color 

·         Add a touch of salt and pepper while placing it in the oven to roast, make sure to keep a good eye on it because this is commonly when people let it burn. 

·         While the escolar is in the oven begin preparing your lobster hash in a pan, heating it up using olive oil 

·         Chop a couple strips of honey smoke bacon and put that in the pan with the lobster hash to burn off 

·         Once the bacon is all most done add finger links potatoes into the pan (Potatoes must be cut into a quarter size and 1/8 thick) continue to cook until the finger links become a golden brown and then add to lobster meat

·         Take white wine and de glaze the pan while adding salt and pepper. 

·         Take your lobster hash and place in a hot pan, add a tablespoon of butter to cream it.

·         Place the lobster hash in the center of the plate put the escolar on top add lobster butter on plate with some herb oil with a nice crispy leek salad on top. 

 

As you see below this is a fabulous dish that should be experienced by everyone.

September Golf Professional

Summer is coming to an end and fall is finally here! That means the club will be getting a little busier in the coming weeks. I’m sure you are just as excited as we are to get some of your “snow bird” friends back for another lovely Florida winter. We look forward to a great season for everyone.

We are also excited about some upcoming charity and junior events. A few dates to remember…

October 8 and November 21 – Cypress Creek will host the Greater Tampa Junior Golf Association as many juniors compete in their fall challenge

October 22 – 9am The Riverview High School Baseball team will have their annual fundraiser here at Cypress Creek.

I encourage each of you to come support the Greater Tampa Junior Golf Association’s events in the upcoming months. These junior golfers are the future of this game that we all play and love so much. Come show them how much Cypress Creek supports junior golf, and the youth of our community. Volunteers will be greatly appreciated for these junior events, if anyone is interested please stop by the Golf Shop.

The Internal Revenue Service is keeping up with the changes our society is utilizing for information dissemination.  Did you know that there is even an “app” that you can add to your smart phone to “stay connected” with IRS.  The article below outlines the various social media and multimedia that we as taxpayers have at our fingertips.  Here is how you can get connected!

 

Connect with the IRS

The IRS uses new and social media tools to share the latest information on tax changes, initiatives, products and services.

IRS has launched IRS2Go, a smartphone application that lets you interact with the IRS using your mobile device. The mobile application includes the following features: 

  • Get your refund status;
  • Get tax updates; and
  • Follow the IRS.
The IRS participates on the following social media platforms, including:

  • YouTube ― The IRS has video channels that provide short, informative videos on various tax related topics in English, American Sign Language (ASL) and a variety of foreign languages.
  • Twitter ― IRS tweets include various tax-related announcements, news for tax professionals and hiring initiatives.
  • Facebook ― IRS has Facebook pages that post valuable tax information for tax professionals and those needing help in resolving long standing issues with the IRS.
Additionally, the IRS has developed its own new media tools to help share important tax information.

Audio files for Podcasts

The IRS creates audio files for use in podcasts. These short audio recordings provide useful information on one tax related topic. The audio files and their transcripts can be found in the Multimedia Center on IRS.gov. These files are also available as podcasts on iTunes.

Widgets

Widgets are tools that can be placed on websites, blogs or social media networks to direct others to IRS.gov for information. The IRS has developed a variety of widgets that feature the latest tax initiatives and programs. These widgets can be found on Marketing Express, the marketing site that allows IRS partners and tax preparers to customize their IRS communications products.

Protect Your Identity

At the IRS, privacy and security are paramount. We are using these tools to share information with you. Do not post any confidential information on new or social media sites, especially your social security number or confidential information. Always protect your identity when using any social networking site.

We will not be able to answer personal tax or account questions on any of these sites.

After receiving almost all of our annual rainfall in a 90 day period it was great to see some extended periods of sunshine in September. Like I have said before, Chris and his entire crew deserve recognition for keeping the golf course open and carts off the paths for the majority of the wet period. 

 As October approaches I would like to remind everyone of the new membership dues which are available to see here. In line with the new dues I am asking all current and new members to come in and receive and sign their updated copy of the membership rules they are available in the golf shop. 

 Also a reminder, the member rewards program will still be available; however we will no longer allow dues payments to receive credits as the rewards program was designed for ancillary purchases only.  Dues will not be considered an ancillary purchase beginning October 1, 2011.

 As we prepare for the upcoming winter season everyone around the club is excited for what we hope will be another fantastic winter at Cypress Creek. We look forward to seeing all of you around Cypress Creek soon.
